Truly Hungry: Sun Butter Protein Bars

As some of you may know I have a serious nut allergy… but that doesn’t stop me from having some nutty cravings every now and then. One of these cravings came to me last week when I was looking for a quick midday snack. So I started looking around the pantry for something nutty, chocolatey, or granola-ey. I found nothing so my next step was to make something. This recipe I am about to share with you will curve your chocolate, honey, or nut cravings all in one little sticky bar!
Time: about 10 minutes
Things you’ll need:
Dark chocolate morsels (1 cup)
Sun Butter (½ cup)
Vital Proteins Flavorless Protein powder (2-3 scoops)
Honey (¼ cup)
Sugar-free maple syrup (¼ cup)
Oats (½ cup)
3 tsp water
Dash of Himalayan or Sea Salt
Square glass pan
Possible Substitutes:
Sun Butter → Peanut Butter
Honey and Maple Syrup → ½ cup of honey or ½ cup of maple syrup
Vital Proteins Protein Powder → any protein powder and flavor of your liking
Dark Chocolate → milk chocolate or white chocolate
Let’s get cooking:
Start by combining your Sun Butter, Honey, and Maple Syrup into a small saucepan and place the mixture on the stove over low heat. Throw in your dash of salt and stir occasionally or until thin (this took me about 5 minutes)
Remove from heat and add in your oats and protein powder. At the point, the mixture will be pretty thick and may be difficult to stir. Add in your 3tsp of water and continue to stir until everything is smooth and incorporated evenly.
Poor this into your glass pan (mine was 8x8) and spread evenly. Make sure if your glass is not a non-stick pan to add parchment paper to the bottom.
Throw in the freezer to solidify a little bit
While your sun butter mixture is in the freezer, melt your chocolate morsels. I did this in 30- second intervals for about 90 seconds.
Take your glass pan out of the freezer and pour the melted chocolate over the sun butter mixture evenly. Smooth with a spatula if necessary.
Throw back in the freezer for about 30 minutes. Then take it out of the freezer to slice into bars or squares. Once cut, take 1 or 2 out to eat (because let’s be honest.. Once you eat one you’ll want another) and throw the rest of the bars in the fridge!
